It is a sparkling wine made from Moscato grapes grown on the Euganean Hills, an area in Central Veneto with a famous vine-growing tradition. The grapes after harvest, undergo a soft pressing and then a cold maceration to about 5 C for 12 hours. The must is separated from the skins by means of a light pressing, and stored at very low temperatures to prevent fermentation. The sparkling process starts after the addition of selected yeasts directly to the must. The resulting wine has the fresh and fragrant character of the original grapes, a low alcohol content and a pleasantly sweet taste.
